Herb-Coated Filet Mignon

We enjoyed the Herb-Coated Filet Mignon and Herbed Whole Wheat Couscous (not shown) so much the night prior, that we had to have it again. This time, more herbs. We also preheated the oven with the grill pan in it. The meat turned out even better than before so it was worth a couple more pictures.
Another piece of the Herb-Coated Filet Mignon with even more herbs. The more herbs, the better! Believe me, I had my doubts, but I was very pleasantly surprised at how good this was.
