Chicken made with Mojito Marinade

I was so excited to finally use some fresh mint from my garden for this Mojito Marinade by EatingWell. It's a pretty simple recipe and can be used on just about any kind of meat or seafood. I choose to make chicken this time and will try it with shrimp or scallops next time.

The chicken soaked in the marinade for only one hour. I used my Foodsaver Marinator and that really makes a big difference -- it's like it had been soaking at least 3 or 4 hours.

I almost forgot to mention; I forgot to put the oil in the marinade. Oops? Nah, I don't think so. The oil that was in the marinade was used to cook the meat in a frying pan. Since there's honey in the marinade, it created a really nice glazed and golden appearance.

I served the chicken with my own recipe for Coconut Lime Rice.

Back when I lived in California, there was a tapas restaurant at Downtown Disney called "Y Ariba! yariba!" and they had this coconut-lime rice that was like nothing I've ever had before. Sadly, they closed down. If they hadn't, it'd be on my places-to-visit list whenever I am in California because it was just that good.
