- 1. Ginger Pineapple Chicken Rice Bowl
I chopped up the chicken and seared it in a little olive oil with some garlic powder. While that cooked, I microwaved some Jasmine rice. Once the chicken was mostly cooked, I poured in some soy sauce and ginger syrup. I cooked that a bit while I rummaged through my pantry for some pineapple chunks.

Last night I made soup for my boys as a somewhat desperate and selfish attempt to make them feel better. My husband Dan has been sick for a week now, congested more than he's ever been in his life (to his recollection at least which isn't saying a whole lot). My son Gaetano has had a sore throat and a fever on and off the last couple of days. With two sick boys in the house I've been feeling like I'm coming down with something too.

- 4. Herb-Coated Top Sirloin with Brocolli and Rice
The meat we bought was used to make EatingWell's Herb-Coated Fillet Mignon, only we used center-cut sirloin instead. We actually prefer the sirloin to the fillet mignon for this recipe. It turned out really tender and if I didn't know any better, I'd think it was fillet mignon anyhow.

For Father's Day we had a full table, with Dan's parents, my parents, Dan's brother and his girlfriend, my ex-husband and his fiancé with their daughter, and our friend Jason and of course me, Dan and Gaetano. We all squeezed around the dining room table for some grilled chicken and beef skewers that were marinated in my Coconut Lime Marinade.

Back when I lived in California, there was a tapas restaurant at Downtown Disney called "Y Ariba! yariba!" and they had this coconut-lime rice that was like nothing I've ever had before. Sadly, they closed down. If they hadn't, it'd be on my places-to-visit list whenever I am in California because it was just that good.
