Yesterday I got a comment on my blog post titled, Roasted Red Pepper & Tomato Soup with Tortellini from a gal named Lola who was going to make this recipe "tomorrow night". When it came time to make dinner tonight I didn't have much time and had to make something quick. This meal immediately came to mind since I always keep tortellini in the fridge for a quick fix dinner.

- Soleil - The Best Turtle Cheesecake of My Life!

For dessert we split the Turtle Cheesecake. This was the absolutely best Turtle Cheesecake I have had in my life (and I've had quite a few). There's a layer of fudginess at the bottom and the caramel on top was fabulous. Every time I visit, I'm saving room for some or I'm taking a slice home!

- Organic Whole Wheat Blueberry Pancakes

Gaeatno loves pancakes, and I try to make them about every other weekend or so. Unfortunately, pancakes are not exactly healthy, so I set out to make a recipe that was just a little bit healthier than our usual batch by going all organic and including blueberries.

- Ginger Pineapple Chicken Rice Bowl

I chopped up the chicken and seared it in a little olive oil with some garlic powder. While that cooked, I microwaved some Jasmine rice. Once the chicken was mostly cooked, I poured in some soy sauce and ginger syrup. I cooked that a bit while I rummaged through my pantry for some pineapple chunks.

- Texican Mac-N-Cheese

I asked my son what he wanted for dinner tonight because I just couldn't decide myself. He asked, "Do we have any macaroni and cheese?" Unfortunately we did not, but I knew I had all the ingredients to whip up my own. I wasn't in the mood for anything average, so I decided to spice things up a bit.

- Fusilli Col Bucco!

The corkscrew shape of the pasta caught my eye. It reminded me of my curly hair and I thought it looked like a fun noodle to try... and it was!
The noodle is almost solid; it has a tiny little hole through it. In fact, I didn't realize that it wasn't solid until I happened to suck some air through a small piece that tried to escape my mouth. Fusilli Col Bucco is thick, thicker than spaghetti. Cooked, I'd say it's about 3 or 4 uncooked spaghetti noodles in thickness. The density of the pasta means you can go with a smaller pile on your plate and still be fully satisfied.

- Quick-N-Easy Spicy Black Bean Soup

Tonight's dinner was made with Pacific Natural's Spicy Black Bean Soup, Central Market Organic's Red Quinoa & Flaxseed Tortiall Chips, Mild Pace Picante Sauce, Horizon's Sour Cream, and some sharp cheddar cheese.
The soup was smooth; no whole beans at all. The lack of whole beans came as a surprise to my boys but it was not a complaint. We all loved it! The trick is to not go crazy with the chips, salsa, sour cream and cheese.

- My Eating Well 1 Year Anniversary

On the 7th of February, 2010 I declared, "I'm not on a diet; I'm Eating Well!" The very next day, I began my journey. That was exactly one year ago.
I thought about trying to eat the same meals for 90 days as I did last year, but that'd be absolutely crazy. Instead I'm going to do something that's just as crazy but doesn't take 90 days worth of effort. I'm going to share with you photos I've never shared online.

- Meyer Lemon Maple Buffalo Satay

I learned two things tonight. #1. If you're going to make satay you've got to have skewers. #2. Don't over pack the meat in the marinade or it won't get covered well enough. The first issue was easy to fix, I sent my husband to the store to pick up some skewers. Meanwhile I prepped the broccoli which I planned to steam. The second issue was sort of fixed while he was at the store; I turned the meat so it would get better coverage.

- Gnocchi with Parmesan Cheese Sauce

I wasn't planning to share tonight's dinner at all because I didn't think it was going to be anything all that special. Oh... my... goodness.... YUM!!!
We had 32 pieces of leftover gnocchi from last night. I was concerned because the uncooked gnocchi got a bit darker in color. I then looked at the packaged whole wheat gnocchi in my pantry and decided they looked so similar it was probably fine to go ahead and cook them. After all, the recipe said I could refrigerate them for a couple days.
